
Our Story
Kompoocha Brewing was founded in 2020 by Victoria Monroy and Christian Larsen with the dream to launch a better tasting kombucha that healed guts and helped pups.
Before Kompoocha, Victoria graduated from UCSD with a degree in Biology and planned to pursue veterinary school. After years working as a veterinary technician, a life-changing volunteer trip in Thailand, and an autoimmune disease diagnosis, her path shifted. What started as a personal interest in health, fermentation, and clean ingredients slowly became something bigger.
At the same time, Christian was preparing to pursue a completely different future in Navy Special Forces. But when Victoria decided to take the leap into starting a business, Christian changed course too and joined her.
For months, Victoria handled everything from recipe development and label design to business paperwork, branding, and building the first website. In September 2020, Kompoocha officially launched at its first farmers market with bottled kombucha in unique and fun flavors and with Christian at the sales helm.
What started as one weekly market quickly grew into more. Customers came back for the smooth taste, creative flavors, and the mission to help animals in need. Before long, Kompoocha expanded into markets and festivals across Temecula, Murrieta, Corona, Riverside, and San Diego.
As the business grew, Victoria and Christian wanted Kompoocha to feel just as sustainable and fun as it was flavorful. Bottles were eventually replaced with reusable growlers, and the “tap trailer” became a regular sight at local events and markets. In their first year, the two-person team sold over 2,000 gallons of kombucha, more than 1,000 growlers, and donated $2,520 to local rescues.
Today, Kompoocha has grown far beyond its farmers market beginnings.
Victoria and Christian now own and operate a 2,000+ square foot kombucha brewery and tasting room in Temecula, where they serve fresh, small-batch kombucha alongside a fully plant-based café menu. The space has become a home for private events, community gatherings, fundraisers, meetups, and everyday moments of connection.
At its heart, Kompoocha is still what it was from the beginning: a small business built by two people who care deeply about health, animals, sustainability, and community.
Kompoocha is here to make kombucha more approachable, plant-based food more exciting, and our little corner of Temecula feel a little more welcoming to everyone who walks through the door.
